Sweet and Sour Chicken and Lo Mein

After a hiatus, Fakeout is back! We have mostly been circulating through the places/recipes we’ve tried, but this week we decided to tackle a new challenge: Chinese food!

Lo Mein Recipe
Pretty hearty servings! I had a difficult time finding the right noodles, so we used rice noodles, and while it tasted great, it didn’t really taste like typical lo mein.

Chicken Recipe
I doubled this for 8 people, and we had just enough. (I didn’t use the sauce recipe included in this one.)

“Sal’s” Riggies, Utica Greens, and Garlic Knots

Sal’s is a well-known and loved restaurant in the heart of B’ville. While we don’t have Sal’s recipes, his food was the inspiration for this week’s Fakeout.

So, I don’t really follow a specific recipe when I make riggies, but this is what I use for a single batch (I doubled it for 11 people, and we had some leftover):

-1 red pepper and 1 onion, sliced in strips
-1 package Wegmans chicken tenderloins
-1 large can Wegmans crushed tomatoes
-1/2 small container of heavy cream
-Red pepper flakes and chili powder to taste

-Saute chicken and then cut into bite-sized pieces
-Saute peppers and onions
-Add crushed tomatoes and spices and simmer
-Add heavy cream
-Add chicken pieces back to the mixture
-Boil rigatoni
-Combine and serve!

Chili’s Fajita Trio and Skillet Chocolate Chip Cookie

Anything that comes with guac is a win in my book, but the Trio is my husband’s go to meal at Chili’s. I like to save room for the dessert. Can you blame me?!

Panera’s Broccoli Cheddar Soup and Chipotle Chicken Paninis

Anyone else have a spouse who is a picky eater? Welcome to the club! Mine was heartbroken when Panera stopped making “his sandwich.” Luckily, Fakeout saved the day! (We did not make the chipotle aioli from scratch…this “cheat” got my husband’s stamp of approval, though!) Also, avocado is never “optional” in my book. 🙂
